The Wine
Our 2011 Napa Valley Cabernet Sauvignon blend was hand-crafted from one of the premiere vineyards in Napa Valley. Sitting just above the fog line, these grapes soak up an abundance of sunlight during the growing season to ensure complete phenolic development and a complex flavor profile. Keeping our production small is paramount to retaining character, personality and a sense of place with our wine.

Composition: 80% Cabernet Sauvignon, 12% Cabernet Franc, 8% Merlot
Elevage: 20 Months aging in 50% new french oak, 50% one-year-used french oak.

Drink or Hold? 
The 2011 Avril Taylor is a more immediately approachable Cabernet Sauvignon compared to the 2009. No need to use a decanter, because this is what we call a pop-and-pour wine. Thanks to a low-tannin vintage, this Cabernet Sauvignon is smooth and ready for consumption now. We anticipate this wine will improve over the next 7-9 years, but don't hold this wine for too long. We'll make more next year!

For long-term wine storage, we recommend a storage temperature of 55-58 degrees fahrenheit. Since each individual has their own palate, it is important to note that during the aging process the fruit-forward component of this wine will deteriorate slowly each year. If you prefer a more fruit-forward profile, drink this wine now.
